I already made some cream cheese coffee cake for snack so I guess I'll put that recipe up for today.
And it is gluten free!
I use Pamela's brand pancake and baking mix to replace the flour. The end result is great and all of my family thinks the gluten free version i am presenting here is better then the glutenous one.
1 cup cream cheese (room temperature
1/2 cup butter (one stick at room temperature)
1 cup granulated sugar
Use an electric mixed until creamed
2 eggs
1/4 cup milk
1/2 tbs vanilla
Use the electric mixed to whip
Mix together
1 3/4 cup Pamela's pancake and baking mix
1 teaspoon baking powder
1/2 teaspoon baking soda
Add gradually to the wet mixture.
Grease and flour (using Pamela's gluten free pancake mix) the bottom f a 13x9 pan
Pour the cake into the pan. Use a spoon to place dollops of a jelly or jam of choice, I like to use home made apricot preservers. I place 6 dollops but this part is all about personal preference. Using a knife cut across pattern diagonally to spread the jelly.
Cook at 350 F for approximately 30 minutes depending on your oven. A tooth pick should come out dry, but not clean :-)
